Egg Bites

Breakfast, Instant Pot

Ingredients

4 Large Eggs

4 strips bacon

3/4 cup Cheddar Cheese

1/2 cup Cottage Cheese

1/4 cup Heavy Cream

1/2 tsp Salt

Dash of Hot Sauce (Optional)

Description

Attempt to knock off Starbucks Egg Bites

Directions

1. Put 1 cup of water in the Instant Pot
2. Cook the bacon, crumble and evenly sprinkle into each cup of a silicone mold.
3. Add eggs, cheese, cottage cheese, cream, salt and hot sauce in a blender and blend until smooth (10-15 seconds)
4. Pour the egg mixture evenly into each cup of the mold
5. Cover with foil and lower into Instant pot on trivet
6. Cover the Instant Pot, set for high pressure for 8 Minutes.
7. NPR (natural pressure release) for 10 minutes. If the pin doesn’t drop, quick release at this point.
8. Remove from Instant Pot on trivet and let sit for 5 minutes.
9. Flip molds and drop egg bites onto cookie sheet
10. Using kitchen torch, gently brown the tops of each.

Notes

These were good but should try about 1/2 as much salt next time. Made about exactly 1 silicone pan worth if filled all the way to the top. I did not add the hot sauce.
